Ingredients

  • 2 sweet potatoes, peeled
  • 1 (14 ounce) can garbanzo beans, drained and rinsed
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 tablespoons tahini
  • 1 teaspoon ground cumin
  • salt and ground black pepper to taste

Cooking Directions

  1. Place sweet potatoes on a microwave-safe plate; cook in microwave until tender, about 15 minutes. Cut sweet potatoes into cubes.
  2. Blend sweet potatoes, garbanzo beans, lemon juice, olive oil, tahini, cumin, salt, and pepper together in a food processor until desired consistency is reached.
Sesame oil can replace the tahini, if desired.
