Cinco Recipe ∼ Cinco de Mayo Guacamole

I combined two of my friends' guacamole recipes for Cinco de Mayo and woah! What a tasty guacamole it made! My friends and family raved! It's now on my list of potluck recipes. It's absolutely delicious as a fajita topping too! Enjoy! This recipe makes a medium-sized bowl of guac, so use more or less avocados for your party.

Ingredients

  • 6 ripe avocados, halved and pitted
  • ¼ red onion, finely diced
  • 2 tablespoons lime juice
  • 5 chopped leaves cilantro, or to taste
  • 1 clove garlic, minced
  • 1 teaspoon salt, or to taste
  • ¼ teaspoon ground black pepper
  • ½ cup reduced-fat sour cream, or as needed
  • ½ tomato, chopped

Cooking Directions

  1. Scoop 5 avocados into a large bowl. Add red onion, lime juice, cilantro, garlic, salt, pepper, and 2 dollops of sour cream. Mash with a fork until desired texture is reached. Cut remaining avocado into chunks and stir into guacamole with tomato. Cover and refrigerate for 1 hour before serving.
Add a capful of white vinegar to freshen up leftovers. It will keep the guacamole from browning.
