Appetizers and Snacks Recipe ⋆ Tropiguac (Hawaiian-style Guacamole)

Tropiguac is my spin on guacamole. Its zesty, tropical flavor is a great appetizer to serve on a hot day. Cucumber is optional, but it's an extra zero calorie vegetable that makes the guacamole taste cool and refreshing -- and it also makes for more servings without adding cost!

Ingredients

  • 2 ripe avocados - peeled, halved and pitted
  • ¼ whole fresh pineapple - peeled, cored, and diced
  • 1 mango - peeled, seeded and diced
  • 2 small tomatoes, diced
  • ¼ red onion, diced
  • ⅓ cucumber, diced
  • 1 teaspoon chopped fresh cilantro, or to taste
  • 2 limes, juiced
  • 1 pinch garlic powder
  • salt and ground black pepper to taste

Cooking Directions

  1. Mash the avocados in a large bowl.
  2. Mix in the pineapple, mango, tomatoes, red onion, cucumber, cilantro, lime juice, garlic powder, salt, and black pepper until well blended.
